Foodie Friday: Mega (healthy) Meatballs

Mega Meatballs

This recipe makes a large batch of very large meatballs. You can sneakily add Omega-3 with flaxseed meal. Omega-3 essential fatty acids have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s.

Ingredients:

  • 3 pounds ground beef, these would also be quite good with ground game meat if you have a hunter in your home
  • 1 cup old fashioned or steel-cut oats, this can be reduced to 1/2 cup or eliminated entirely if needed to but it may change the consistency of the meatballs
  • 1/2 cup flaxseed meal
  • 1/2 cup shredded parmesan cheese
  • 1/3 – 1/2 cup chopped green onion
  • 2 large eggs
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoon black pepper

for the sauce: 

  • 1 large can (15 ounces) tomato sauce
  • 1/4 cup Bragg’s Liquid Aminos, or low sodium soy sauce
  • 1 cup chicken or beef stock
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

In a large bowl combine all meatball ingredients.

With (clean) hands, get in there and mix that beautiful mess all up. It takes a bit of work with a huge batch like this, but it’s worth it. 

Once fully mixed take a large amount and form into a ball. I shoot for a little smaller than a baseball. The trick is to get your meatballs all relatively the same size to ensure even cooking. Place meatballs in a large baking dish prepared with nonstick cooking spray. 

In a large bowl (and I’ll be honest with you, I just use the same bowl) mix together tomato sauce, Liquid Aminos, broth, and seasonings. Pour over meatballs. 

Cover pan with foil and bake at 400 for 30 minutes. Then remove foil and bake for an additional 20 minutes until browned on top and cooked throughout.
