The US is the 3rd largest pork producing country following China and the European Union.

A typical market hog weighing 275 lbs. live produces a carcass about 208 lbs. with 114 lbs. qualifying as “lean meat.”  The wholesale cuts of pork are ham, loin, shoulder and belly.

The US meat and poultry supply is the most affordable in the world according to global data.  The United States, in 2012, spent 5% of its disposable income on food consumed at home compared to 9% in Canada, 24% in Mexico and 47% in Pakistan.

Bacon is one of the oldest processed meats.  The Chinese began salting pork bellies as early as 1500 B.C.

Americans on the average eat 18 lbs. of bacon each year.  That’s about 5.6 billion lbs. for the entire United States.
